We just love eggs. Don’t we?
Hence, let’s prepare a simple yet colorful and tasty egg curry.
PREP: 30 MINS COOK: 15 MINS TOTAL: 45 MINS

INGREDIENTS:

4 potatoes
3 boiled eggs
5 spoons vegetable oil
2 medium sized onions
3 medium sized tomatoes
2 green chillies
2 spoons garlic paste
2 spoons ginger paste
2 spoons coriander powder
1 spoon cumin powder
1 coriander leaf
1 spoon garam masala
½ spoon turmeric powder
½ spoon red chilli powder
Salt to taste

DIRECTIONS:

Boil 4 potatoes crush and then mash them completely to store it in a bowl and keep it aside.

Heat 50ml cooking oil in a deep pan and when hot, add 3 boiled eggs and fry until golden.

Turn off the flame and remove the fried eggs from the pan.

The onions, tomatoes, green chillies into a smooth paste. Also add little oil while grinding in the mixer.

Now heat the remaining oil in the same pan and add the paste you just made to it when it is hot. Fry for 2-3 minutes. Add the ginger and garlic paste, all the dry spices, mix and fry till the oil begins to separate from the masala.

Add salt to taste. Now add a cup of warm water to this masala and bring to a boil on a medium flame.

Add boil potatoes mash which was initially kept aside to the gravy.

Cook for for 5 minutes and then add the fried eggs and add 2 cups of water and cover the pan with its lid. Add chopped coriander leaves and cook it for 10 more minutes.

Once the gravy is thick, please turn off the flame. Serve it with Rice or Rotis.
